     Amy's Beef Eggplant Casserole

Ingredients
1 Medium Eggplant
6 Tablespoons of Butter
2 Cups of Ground Beef, Turkey or Sausage
2 Onions, Sliced
1 1/2 Cups of Canned Tomatoes
1 Cup Grated Cheese of your choice
1 Teaspoon Salt
Dash of Pepper
1 Cup of fine dry bread crumbs
 

Instructions
Preaheat oven to 370 degrees
Remove skin from Eggplant and cut into 1/2 in thick pieces, yielding about 5 cups.
In a buttered dish, place in layers; cooked Meat, Onions, Tomatoes and Cheese. Reserve 1/4 cup of cheese for top.
Top with Bread Crumbs mixed with remaining Cheese and dot with remaining Butter. Bake for 35 minutes.
Serving Suggestions
Meme' preferred to use1 lb of ground turkey, 1 rib of celery, garlic and green onions and sauted this with the eggplant.
