     Corn Muffins with Broccoli and Cheese

Ingredients
2 boxes Corn Muffin mix
1/2 cup milk
2 cloves garlic
1 (8oz) container cottage cheese
4 eggs
1 tbsp salt
1 cup plus 2 tbsp grated cheddar cheese
1 stick unsalted butter
1 medium onion, chopped
 
1 (10oz) pkg frozen chopped broccoli, thawed by not drained

Instructions
Preheat oven to 375 degrees.
Mix together all ingredients except 2 tbsp cheddar cheese to create batter.
In a 10in. cast iron skillet, melt butter. Saute onions and broccoli until soft. Pour batter over vegetable mixture and sprinkle top with cheese. (OR an 11x17in. baking dish.)
Bake in oven until golden, about 30 minutes.
