     Taco Soup (Chili)

Ingredients
1 1/4 lb. Ground Turkey
1 med.-large Onion [chopped]
6-8 cloves Garlic [minced or crushed]
1 pkg. Taco Seasoning
2 teas. ground Cumin
1 teas. Red Pepper Flakes
1 can Black Beans [15 oz.]
1 can Pinto Beans [15 oz.]
3 cans diced Tomatoes [15 oz.]
 
2 cans Corn n Chiles [15 oz.]
2 Serrano (hot) Peppers [minced]
1 cup Carrots [diced]
1 cup Celery [diced]
1 cup Cauliflower [diced]
1 tbsp. Olive Oil
Salt & Pepper to taste...

Instructions
Over medium heat, cook onion in [1 tbsp] Olive Oil... add the Ground Turkey and brown... add the Taco Seasoning and 2/3 cup water... add the Vegetables, Garlic, and Serrano Peppers... heat the mixture through to a simmer...
Add the Tomatoes [w/ juice], Corn [w/ juice], Beans [rinsed], Cumin, and Red Pepper Flakes... heat the mixture through back to a simmer... Salt & Pepper to taste...
