     Chicken Breasts Parmesan

Ingredients
2 tablespoons vegetable oil
2 whole boned chicken breasts split to make 4 servings
1- 8 ounce can tomato sauce
1 teaspoon lemon juice
1 teaspoon sugar
1 teaspoon chicken boullion
1/8 teaspoon oregano
4 slices mozzarella or Swiss cheese
2 tablespoons grated parmesan cheese
 
2 inches pepperoni, grated
1 to 2 tablespoons chopped parsley, garnish

Instructions
Pound chicken breasts, between wax paper to 1/2 inch thick. Brown breasts inhot oil. Measure lemon juice, boullion, sugar and oregano into tomato sauce. Cover chicken with slice of cheese on platter. Add tomato mixture to pan after all chicken is on platter. Simmer tomato sauce 2 minutes. Add pepperoni, stir and serve. Pour sauce over chicken pieces, top with parmesan cheese and garnish with parsley.
I always serve this with rice and broccoli.
