     Squash and Cheddar Casserole

Ingredients
2 - 3 pounds yellow summer squash, sliced
1 cup onion, chopped
1 cup water
1/2 teaspoon salt
1/4 cup butter
Pepper to taste
4 oz cheddar cheese, shredded
1 cup saltine crackers, crushed
2 eggs, slightly beaten
 

Instructions
1 recipe yellow summer squash- Combine squash, onion, water and salt in a large sauce pan and bring to a boil. Reduce heat to medium and cook, uncovered for 15 - 20 minutes, until squash is tender. Stir frequently. Drain well and mash squash, butter and pepper coarsely with a potato masher.
Combine 1 recipe yellow summer squash with cheese, crackers and eggs.
Pour into a greased shallow 1 1/2 quart baking dish.
Bake at 350 degrees for 35 minutes. Can add more cheddar cheese on top of casserole in the last 10 minutes of baking.
