     Sweet kairi (sweet raw mangoes) chutney

Ingredients
4 medium sized raw mangoes (kairis)
2 cups sugar
.5 cup jaggery (crushed)
2 tsp chilli powder
2 tsp garam masala
2 tsp cumin (jeera)
12 raisins
2 cms piece of ginger
2 tsp ghee
 
Pinch of hing (asefoetida)
Salt to taste

Instructions
Cut the aw mangoes into smal pieces and boil inwater till soft. Allow to cool, then mash or grind to a fine paste.
Boil the sugar and jaggery in 3/4 cup syrup of water.
When it acquires a syrupy consistency, add the mango paste. Allow to simmer for 5 minutes, stirring from time to time. Add ginger, chilli, garam masala. Allow to mix. Now add grated coconut and raisin. Allow to cook for a 1 more minute. Remove from fire.
Heat ghee in a separate pan. Fry the jeera and hing. Add to to the mango chutney. For addd taste, sprinkl roasted jeera powder.
Serving Suggestions
Serve hot or cold.
