     Broccoli Potato Soup

2 cups broccoli florets
1 small onion
2 gloves garlic - minced
4 medium potato - peeled and diced
2 cups water
2 cups almond/rice milk
1/2 cup fresh parsley, chopped

Saute chopped onion and diced garlic in 1/8 cup water until tender. Add broccoli, potatoes, and two cups of water. Bring to a boil, reduce heat and simmer for 15-20 minutes or until vegetables are soft. Stir in milk and parsley. Add salt to taste. Heat, but do not boil.
