     Lamb Chops with Herb Vinaigrette

Ingredients
1/2 teaspoon (2 mL) salt
1/2 teaspoon (2 mL) freshly ground pepper
8 lamb loin chops (4 ounces/125 g each)
2 tablespoons (30 mL) finely chopped green onions
11/2 tablespoons (22 mL) water
1 tablespoon (15 mL) red wine vinegar
11/2 teaspoons (7 mL) lemon juice
11/2 teaspoons (7 mL) olive oil
1 teaspoon (5 mL) Dijon mustard
 
11/2 tablespoons (22 mL) each finely chopped fresh flat-leaf parsley and tarragon
1 tablespoon (15 mL) finely chopped fresh mint
1 tablespoon (15 mL) finely chopped bottled pimento or roasted red bell peppers

Instructions
Sprinkle lamb chops with one-quarter teaspoon (1 mL) of the salt, and all the pepper. Preheat broiler to hot and broil chops 5 minutes a side or until desired degree of doneness. Meanwhile, in a small microwave bowl, combine onions, water and vinegar; microwave on high for 30 seconds. Stir in remaining salt, and the vinegar, lemon juice, olive oil and mustard, blending well. Stir in parsley, tarragon, mint and pimento. Serve over hot lamb.
