Instructions |

Cook Squash or Eggplant and drain. Brown hamburger meat with onions, peppers, and mushrooms, drain.

With this mixture add the rice, rotels, soup, olives, cheese, and sour cream. Top with bread crumbs. Dot with butter.

Bake 350 degrees until hot and bubbly
