     Banana-Apricot Bread

Ingredients
1-3/4 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1/2 cup (1 stick) butter, softened
1/2 cup granulated sugar
1 large egg
1 tspn vanilla extract
2 large, ripe bananas, mashed
 
1/2 cup chopped dried apricots
1/2 cup coarsely chopped walnuts (about 2 ounces)

Instructions
Prehea oven to 350 degrees farenheit. Grease th bottom only ofa 9x5-inch loaf pan. Mix together flour, baking powder, salt and baking soda.
Beat together butter and sugar at medium speed until light and fluffy. Beat in egg and vanilla. At low speed, alternately beat flour mixture an mashed bananas into butter mixture. Stir in apricots and chopped nuts. Spoon batter into prepred pan; smooth top.
Bake bread until golden and a toothpick inserted in the center comes out clean, 50-55 mins.
Transfer pan to a wire reack to cool for 5 minutes. Turn bread out onto rack to cool completely. Wrap in aluminum foil and let stand fo 8 hours overnight.
