     Coconut Rice

Preptime   about 25 mins

Ingredients
2 tablespoons Peanut Oil (You can use Canola Oil)
2 cups long grain rice
Salt and pepper to taste
4 cups canned unsweetened coconut milk
1/2 cup chopped green onions, including green parts
 

Instructions
In a medium pot, heat the oil over medium to high heat.
Add the rice and cook, stirring, until the rice becomes translucent, about 2 mins
Season with salt and pepper and stir in coconut milk
Bring to boil, reduce the heat to low, cover, and cook until the liquid is absorbed, about 20 mins. Fluff the rice with a fork, stir in the green onions, and let stand, covered, for 5 mins before serving.
Serving Suggestions
I'm keeping it simple with sauteed vegetables over it.
