     Lettuce Wraps

1 large head of iceberg lettuce
1 tablespoon vegetable oil
1 lb ground chicken
3 medium sized cloves of garlic minced
1 cup chopped scallions (green part only)
1 tablespoon minced peeled fresh ginger
3/4 cup hoisin sauce
4 teaspoons soy sauce
1 teaspoon Asian dark sesame oil
3/4 cup finely chopped water chestnuts

Using a small paring knife core out head of lettuce. Carefully pull apart and rinse lettuce leaves. Pat dry with paper towel.
Heat oil in a large skillet over medium heat. Add chicken and garlic and cook until chicken is cooked through (drain if necessary). Turn off heat, stir in scallions, ginger, hoisin sauce, soy sauce, sesame oil, and water chestnuts. Cook over medium low heat stirring until bubbly and heated through
