     Tomato-Herb Cheese Potatoes Au Gratin

Ingredients
1 Tbsp. butter
3 plum tomatoes, stemmed & sliced
2 small onions, thinly sliced
1/2 lb. shredded swiss cheese
2 1/2 lbs. white potatoes, peeled
2 cups half and half
1 1/2 tsp. salt
3 Tbsp. flour
1 pkg. herb cream cheese
 
1/2 tsp. pepper
1/4 cup parmesan cheese

Instructions
Heat oven to 375 F. Spray 2 1/2 qt dish. Melt butter in skillet, ad onions-cook slightly for about 12-15 minutes. Spread 1/3 potatoes. Sprinkle w/ 1/4 tsp. salt. Layer w/ half the tomatoes. Top w/ 1/2 onion and cheese.
Continue layers. Whisk together half n half and flour in saucepan. Heat over med-high heat. About 8 minutes. Remove from heat. Whisk 1 tsp. salt, cream cheese, pepper and half the parmesan. Pour over potatoes. Cover w/ alum. foil. Bake 1 hour and 10 minutes.
