     Monterey Chicken Casserole

Ingredients
4 C cooked Chicken Breast, cut into 1inch pieces
1-16 oz bottle Taco Sauce
2-4-oz cans Diced Green Chilies
1 C frozen Corn Kernel
3/4 C instant Rice
1 (2.25 oz) can Sliced Ripe Olives, drained
1 pkg of 12 Taco Shells, crumbled
2 C (8 oz) Cheddar Cheese, shredded
1/2 C Water
 
Optional garnish- sliced Green Onions and Sour Cream

Instructions
Preheat oven to 375. Combine chicken, taco sauce, chilies, corn, rice, water and olives in a large bowl. Spoon into ungreased 13x9 baking dish. Combine taco shells and cheese in medium bowl; sprinkle over chicken mixture. Bake for 40-45 minutes or until top is golden brown. Garnish w/onions and sour cream, if desired. Makes 8 servings
