2 pkg frozen chopped Spinach, thawed and well drained
4 to 6 Chicken Breasts, deboned and skinned
1 cup Mayo
2 cans Cream Chicken Soup
1 tsp Curry Powder
1 tsp Lemon Juice
1/2 C extra sharp Cheddar Cheese, grated
1/2 C buttered fresh bread crumbs
Instructions
Spread spinach in greased 9 X 13 glass dish. Arrange chicken breasts on Spinach. Mix mayo, soup, curry and lemon juice. Spread over chicken. Top with cheese and bread crumbs. Cook at 350° for an hour. Serve over Uncle Ben's Chicken & Wild Rice
