Mash potatoes with margarine, salt, pepper and milk to stiff consistency. Add onion, sour cream, softened cream cheese, and half of the cheese until well blended. Pour into large casserole dish sprayed with cooking spray. Sprinkle remaining cheese on top. Bake 30 minutes at 350 degrees. Top with bacon crumbs if desired. Continue baking 30 minutes or until bubbly. You can use left-over mashed potatoes, or make the casserole ahead and refrigerate 1-2 days before baking.
