Peel, halve and core apples;
Grate apples coarsely;
Place grated apples in to large non-reactive pot;
Grate zest, then squeeze and strain the juice from the lemons and oranges; add zest and juice into a pan. Add remaining ingredients and stir thoroughly to mix.
Bring to simmer over low heat stirring occasionally;
Continue cooking about 45 minutes, stirring frequently untril mixture is reduced to a thick jam-like consistency;
Allow mincemeat to cook then store in jars and refrigerate until ready to use
