     Meatless Mincemeat

Ingredients
2 lbs granny smith apples
2 lbs McIntosh apples (I substituted figs for the apples)
2 medium lemons
2 medium oranges
2-1/2 c dark/golden raisins
1-2/3 c. currants
1/2 c. diced candied orange peel
1-1/4 c. light brown sugar
2/3 c. dark rum or brandy
 
1/4 c. distilled white vinegar
2/3 c. unsalted butter
1 t. nutmeg and cinnamon
1/2 t. ground cloves and ginger

Instructions
Peel, halve and core apples; Grate apples coarsely; Place grated apples in to large non-reactive pot; Grate zest, then squeeze and strain the juice from the lemons and oranges; add zest and juice into a pan. Add remaining ingredients and stir thoroughly to mix. Bring to simmer over low heat stirring occasionally; Continue cooking about 45 minutes, stirring frequently untril mixture is reduced to a thick jam-like consistency; Allow mincemeat to cook then store in jars and refrigerate until ready to use
