     Apricot salad

Ingredients
4 apricots - halved & stone removed
1/3 head iceberg lettuce - broken roughly by hand
10g grated parmesan cheese
12 cherry tomatoes - halved
dash olive oil - to taste
dash of balsamic vinegar - to taste
 
Instructions
Toss first 4 ingredients in a salad bowl
Add olive oil and balsamic vinegar to taste
Serving Suggestions
Nice accompaniment to bbq's, chicken, etc.
