Beat egg whites till stiff. Add sugar 2 tablespoons at a time. Add vanilla and vinegar. Beat until stiff.
Butter boil to cover a swiss roll tin (30 x 25cm) and spread mixture evenly.
Lightly sprinkle with extra caster sugar and cinamon.
Cook 375F for 10 minutes. When cold, place greaseproof on top then a tea towel, turn over quickly. Spread with whipped cream, fresh strawberries / berries / canned boysenberries. Roll up like a swiss roll.
