Preheat oven to 375. Prick bottom of frozen shells with fork. Put in oven for 5 minutes (while frozen), then remove.
Sauté onion, ham and red pepper in butter until the onion is clear, last minute or so of sautéing, add a splash of sherry. Divide this between 2 pie shells.
Divide cheese and put half on top of each pie. Mix mil, half & half, eggs, salt, pepper and nutmet well & pour over ham & cheese.
Bake in preheated oven 45 to 1 hour, till top is golden. Let stand 5 minutes before cutting.
