1 lb boneless, skinless chicken breast halves, diced (1/2 inch cubes)
8 oz fresh mushrooms, diced
1 red bell pepper, diced
1/2 c sliced green onions
2 large cloves garlic, minced
2/3 c unsweetened coconut milk (can omit)
2 T hoison sauce
1 T minced fresh ginger
1/4 t salt
pepper to taste
1/2 c lightly salted peanuts, chopped
1 medium head napa cabbage
Instructions
Heat sesame oil in large skillet. add diced chicken and saute until
lightly browned. Stir in mushrooms, bell pepper, green onions, and
garlic and stir fry until liquid is evaporated.
Stir in coconut milk, hoison sauce, ginger, salt, and pepper, and stir
fry until thickened. Cool slightly before spooning into serving dish.
Sprinkle with peanuts.
Trip top 4-5 inches from cabbage leaves. To serve, spoon about 1
T chicken mixture in center of leaf and fold leaf like a taco.
