     Herb batter fried chicken

Ingredients
2 1/2 lb. chicken parts
1 1/3 cups flour
1 1/4 tsp. salt
1 tsp. grated lemon peel
1/2 tsp. oregano
1 tsp. thyme
3/4 tsp. paprika
1.4 tsp. pepper
1 egg
 
1 tsp. sage
Crisco for frying

Instructions
Rinse chicken parts and pat dry. Place 1/3 cup flour in large zip storage bag. Place chicken pieces in bag a few at a time. Shake to coat. Combine remaining 1 cup of flour with salt, lemon peel and seasonings. Blend eg and water. Stir into dry ingredients. Dip chicken pieces in batter, lettign excess drip back into bowl.
To pan fry- Melt crisco in skillet to about 1/4 inch in depth and heat to 365 F. Brown chicken on all sides. Reduce heat to 275 F. Continue cooking uncovered until chicken is done and tender, about 30 minutes, turning several times during cooking. Brown several in uncrowded pan for better results. Drain on paper towels.
To deep fat fry- Heat crisco in deep fryer to 365 F. Cook chicken pieces until done about 10-15 minutes, depending on size of chicken. Do NOT USE BASKET for better results. Drain on paper towels.
