     Cashew Chicken Casserole

Ingredients
1 c. chopped celery
1/2 c. chopped onion
2 cans cream of chicken soup
2/3 c. chicken broth
1 lb ground turkey, chicken or hamburger
4 tbs. soy sauce
2 c. cooked rice
1 cup cashews ( I usually use more!)
 

Instructions
Saute celery, onion and meat until meat is cooked through. Mix broth, soy sauce and soup together. Stir in rice and meat mixture. Mix in half the cashews saving some for top. Put in casserole dish and bake for 30 minutes at 375. Put more cashews on top when done. Can also put chow mein noodles on top.
Variation by Janice E. Jones-Yarnell- I have the same recipe that uses tun either cream of mushroom or cream of celery soup and instead of rice ... chow mein noodles either fresh or the dried ones.
