     Chilled hericot verts with feta

Ingredients
1 1/2 lb green beans, ends removed
1 small red onion, minced
4 oz feta, crumbled
1/2 c coarsely chopped walnuts
Lemon vinaigrette-
3 T fresh lemon juice
3 T white wine vinegar
1 T Dijon mustard
 
1/2 t sugar
1/2 c vegetable oil
1/4 t salt
Fresh ground pepper

Instructions
Plunge green beans into boiling water for 5 minutes. Drain and rinse with ice water. Pat dry, cover, and chill.
Make lemon vinaigrette- Whisk lemon, vinegar, mustard, and sugar. Add oil and season with salt and pepper. Set aside.
Transfer beans to shallow bowl, add onion, and toss with vinaigrette. Sprinkle with nuts and feta.
