5 large tomatoes
|
|
1 red onion, halved and thinly sliced
|
|
1/2 c olive oil
|
|
1/2 c red wine vinegar
|
|
1/4 c fresh parsley
|
|
3 large garlic cloves, finely chopped
|

4 oz feta cheese, crumbled
|
|
1/3 c Katamala olives
|
|

Instructions |

|
Overlap tomatoes and onion slices on large plate.
|
|
|
Whisk oil, vinegar, parsley, and garlic in small bowl. Season with
salt and pepper. Pour over salad. Refrigerate for up to 3 hours.

Sprinkle with cheese and garnish with olives.
|
