     Tomato salad with feta and olives

Ingredients
5 large tomatoes
1 red onion, halved and thinly sliced
1/2 c olive oil
1/2 c red wine vinegar
1/4 c fresh parsley
3 large garlic cloves, finely chopped
4 oz feta cheese, crumbled
1/3 c Katamala olives
 

Instructions
Overlap tomatoes and onion slices on large plate.
Whisk oil, vinegar, parsley, and garlic in small bowl. Season with salt and pepper. Pour over salad. Refrigerate for up to 3 hours.
Sprinkle with cheese and garnish with olives.
