     Mexican Casserole

Category   Entrees - Maindishes
Sub Category   Quick Meals
Servings   6 - 8
Preptime   15 min

Ingredients
1 bag of tortilla chips of your choice
1 1/2 pound ground beef
1 medium onion chopped
1 small can sliced black olives
1 small can chopped chilis
8 oz bag of shredded cheese (3 cheese Mexican or your choice)
2 tbls chili powder
2 tsp garlic powder
2 tbls seasoned salt

1 16oz can of refried beans (I use Vegetarian Beans)
1 tsp oil

Instructions
Preheat oven to 350 degrees. Heat up oil in frying pan. Saute onions and chilis. Brown ground beef with seasonings and stir until done. Drain fat from pan. Add black olives to mixture and stir.
Crush tortilla chips in bag. You don't want them to be crumbs, just smaller pieces. Add chips to cover the bottom of a 9 x 13 pan that has been sprayed with cooking spray.
Add tablespoons of refried beans from can on top of the chips. Sprinkle 1/4 cup of cheese over the beans and chips. Add beef mixture over cheese. Add the rest of the chips over the top of the meat. Sprinkle the rest of the cheese over the top of the chips.
Bake for 30 minutes. Cheese will be melted and the chips will be crispy and brown.
Serving Suggestions
Top with Salsa, Guacamole and Sour Cream and serve with a salad!
