     Chicken saute with mushrooms and white wine

Ingredients
2 T olive oil
2 large boneless skinless chicken breast halves (10 oz)
4 oz fresh shiitake mushrooms, stems trimmed, thinly sliced
1/4 c hsallots
1/2 c chicken broth
1/4 c dry white wine
1/2 t dried tarragon, crumbled
 

Instructions
Heat 1 T oil in medium skillet over medium-high heat. Season chicken with salt and pepper/ Add chicken to pan and saute until golden brown and just cooked through, about 5 minutes per side. Transfer to plate.
Heat remaining 1 T oil in same skillet. Add mushrooms and shallots; saute until mushrooms are light brown and wilted, 5 minutes. Using slotted spoon, transfer mushroom mixture to plate with chicken. Add broth, wine, and tarragon to skillet; simmer until reduced to sauce consistency, 5 minutes. Return chicken, mushroom,s and any collected juices to pan. Simmer just until heated through, about 2 minutes.
