3 large balls (3-4 oz each) fresh mozarella, sliced
1 red onion, thinly sliced
Fresh basil leaves
Balsamic vinaigrette-
1/4 c balsamic vinegar
1 T honey
1 clove garlic, finely minced
1/4 t ground black pepper
1/4 t dried oregano, crushed
1/8 t salt
2 T olive oil
Instructions
For balsamic vinaigrette-
In small mixing bowl combine all ingredients except oil. Whisk
mixture vigorously while adding oil in slow steady stream.
On large platter, alternate slices of tomato, mozzarella, and onion
in slightly overlapping pattern. Tuck in basil leaves. Drizzle with
balsamic vinaigrette.
