Preheat oven to 350°. Line a rimmed baking sheet with aluminum foil.
Rub pork with vegetable oil.
In a small bowl, combine salt, cumin, paprika, garlic powder, oregano, and cayenne. Rub mixture on pork loin.
Bake for 30 minutes, or until an instant-read thermometer inserted in thickest part of pork registers 165°. Remove from oven and let rest for 15 minutes before slicing.
Spray aluminum foil with nonstick cooking spray. Wrap tortillas in foil. Bake tortillas for 10 minutes, or until pliable.
Slice pork against the grain into 1/2-inch-thick slices. Place 2 to 3 pieces on each tortilla. Top with cheese, Spicy Slaw, and avocado. Serve immediately.
