     Sausage, Spinach, and White Bean Soup

Ingredients
1 lb.sweet Italian sausage
1 container chicken broth, 32 oz
1/2 C chardonnay or other dry white wine
2 cans cannellini beans, drained and rinsed
1 tsp rosemary, fresh or dried
salt and pepper to taste
freshly shredded Parmesan cheese
1/2 C chopped onion
2 C red potatoes, cubed
 
4-5 cloves garlic, minced
1/2 C real bacon bits
1 pkg fresh spinach

Instructions
1. Remove casings from sausage. Crumble and brown with onions. Drain well. 2.Add broth, potatoes, wine, garlic, and beans. Cover and simmer until potatoes are tender; about 15 minutes. 3.nStir in spinach, bacon, and rosemary. Cook until spinach wilts. 4. Add salt and pepper to taste. 5. Top individual servings with Parmesan cheese.
