     Soft Ginger Cookies

Ingredients
1 c. molasses
1 c. sugar
1/2 c. oil
1 1/2 teas. baking soda
1 1/2 teas. ginger
1/4 teas. cinnamon
1/2 teas. salt
2 c. flour
course sugar
 

Instructions
Mix molasses, sugar and oil. Dissolve baking soda in 1/2 c. boiling water and add to molasses mixture. Blend spices and flour and add. Stir until blended.
Add 3 more cups flour to make very stiff dough.
Press out with hand until 1/3 inch thick. Cut into shapes - 2 inch round or gingerbread men. Sprinkle with sugar.
Bake at 350 for 10 minutes on ungreased cookie sheet. Cool.
