     Quick Tomato Seafood Soup

Ingredients
2 tablespoons olive oil
1 medium onion, thinly sliced
1 cup celery, thinly sliced
2 tablespoons parsley, chopped
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
Dash of cayenne pepper
2 cans of Tomato Bisque soup
 
1-16 oz. can of chicken broth
1 bottle clam juice
2 ounces of cooked rice (or minute rice)
1 pound of white fish cut in 1-inch chunks
1 (4 1/2 oz.) can of shrimp, drained (or frozen shrimp)
1 (8 oz.) can of crab meat, drained (or frozen)
Salt and pepper to taste
lemon wedges

Instructions
Heat the oil in a large pot over medium heat and sauté the onion and celery till onion is limp.
Stir in parsley, basil, rosemary, thyme, cayenne, tomato bisque, clam juice and chicken broth. Bring to a boil, reduce to for simmer about 10 minutes.
Add fish, shrimp, crab & rice and simmer until fish flakes. Season to taste with salt and pepper.
Serving Suggestions
Serve hot with lemon wedges
