Combine flour and salt in lg bowl. Combine warm water and yeast in small cup and allow to proof for 10 min.
Pour yeast, buttermilk and honey into flour mixture and mix well, adding more liquid if too dry. Knead for 7/10 min. Return dough to bowl, cover and set aside to rise until dough has doubled. About 90 min.
Divide dough into 12 pieces. Shape into balls and place into spring form pan. Again, cover and let rise (45 min). Bake at 425 35/45 min.
