1 jar (7 oz) sweet roasted red peppers, drained and patted dry
1/2 cup whole almonds, chopped, divided
2 pkgs (8 oz each) cream cheese, softened
1 garlic clove, pressed
1 pkg. (10 oz.) frozen chopped spinach, thawed and rained
Instructions
Chop feta cheese, red peppers and almonds. Combine cream cheese and feta cheese. Press garlic over cheese mixture with garlic press and mix well. Stir in spinich.
Line a bowl a 2 qt. bowl with plastic wrap. Sprinkle 2 tablespoons of the chopped almonds over the bottom of the bowl. Press half the cream cheese mixture over the almonds; top with red peppers. Spread remaining cheese mixture over red peppers.
Cover with a lid and chill. To serve invert onto a serving platter. Remove plastic wrap and press remaining nuts into side of molded cheese. Serve with canape bread or crackers.
