1/4 cup thickly shaved grana pardano, parmigiano reggiano or pecorino romano cheese
balsalmic vinegar to taste
Instructions
Preheat oven to 400 degrees
Heat 2 tbsp, olive oil and garlic in a cast-iron skillet over medium to high heat.
coat the meat with about 1 tbsp olive oil. season both sides of meat with salt and pepper
sear meat in hot skillet for 3 min per side, moving as little as possible
using an oven mit, transger meat to the over and cook until mediaum rare, no more than 3 min
remove meat from oven, let rest 3-4 min and slive against the grain in 1/2 in thick pieces
divide arugala amoung 4 plates and top each with 4-5 slices of steak
top each plate with 2-3 cheese shavings and drizzle with olive oil and balsamic vinegar to taste.
