     Corn Bread

Ingredients
2 cups corn meal
1 cup flour
1 Tablespoon baking powder
1 teaspoon salt
1 egg
Milk- enough to make a thick batter
1/4- 1/2 cup oil
1 Tablespoon sugar- Optional
 

Instructions
Pre-heat oven to 400 degrees. COAT iron skillet with oil, enough to cover bottom and up sides; about 1/4 cup oil or LESS. Place skillet in oven to heat up while mixing corn bread.
Mix dry ingredients. Add milk, egg, and 1/4 cup oil. Add enough milk to make a thick batter (batter should pour easily into pan). Better to start out with less milk and add as you go.
Pour batter into hot skillet. Bake at 400 degrees for 30-35 minutes.
VARIATION- Can use stone ground cornmeal. Makes a coarser bread, but it is hearty and good, better for you than refined cornmeal. Granny originally instructed me to melt shortening or use bacon grease to add to batter.
