Pre-heat oven to 400 degrees. COAT iron skillet with oil, enough to cover bottom and up sides; about 1/4 cup oil or LESS. Place skillet in oven to heat up while mixing corn bread.

Mix dry ingredients. Add milk, egg, and 1/4 cup oil. Add enough milk to make a thick batter (batter should pour easily into pan). Better to start out with less milk and add as you go.

|
Pour batter into hot skillet. Bake at 400 degrees for 30-35 minutes.

|
VARIATION- Can use stone ground cornmeal. Makes a coarser bread, but it is hearty and good, better for you than refined cornmeal.
Granny originally instructed me to melt shortening or use bacon grease to add to batter.
