2 cups walnuts, crushed (almonds, pecans,or pistacio will do)
2 tbs cinammon
1/2 tsp salt
1 cup honey
3/4 cup water
1 cup sugar
1 tbs lemon juice
1 inch lemon zest
1 cinammon stick
1 stick of butter
Instructions
Heat oven to 350 degrees. In a small saucepan, add honey, water, sugar, cinammon stick, lemon juice, and lemon zest. When brought to a boil, remove from heat and set aside.
Melt the stick of butter in a saucepan, or microwave on high for 30 minutes. Set aside to brush dough.
Place crushed walnuts in a medium bowl. Add 2 tbs cinammon, and 1/2 tbs salt.Mix until combined.
Place (thawed)phyllo dough on a flat surface. Cover with a damp paper towel to keep from drying. Lay 3 sheets of dough, brushing each with butter. ( Each layer MUST be brushed with butter so it will be easier to pre-cut). Add another 7, and sprinkle on half of walnut mixture. Add a set of 3 at least five times, and then repeat with another 7 layer, sprinkling the other half of walnut mixture on top. Follow along with sets of 3 sheets until all of the dough is gone. (Use both rolls of phyllo dough)
After the last sheet is brushed with butter, cut the dough length wise making it 2 1/2 to 3 inch apart. Complete by doing the same horizontally. Bake for 35-40 minutes until dough is crisp and golden brown.
