Place the chocolate in a large bowl. Bring the
cream to a boil and pour it over the chocolate.
Stir until the chocolate has melted, trying not to
create bubbles. Let it cool for 2min., then ad the
butter in 2 stages and stir until just
incorporated, got to be smooth and glossy, no oil
on surface. Cover and chill for 3hrs. or
overnight. Remove from fridge 15min. prior to
making. Put cocoa powder in a bowl, powder your
hands with cocoa, make the balls and drop them in
the cocoa powder bowl. Cover and chill or serve
right away.
