     Green Chile Chicken Enchiladas

Ingredients
1/2 jar Cookwell Green Chili Stew or 1 jar Cookwell tomatillo salsa
1 cup heavy whipping cream or crema agria
1 med. onion (diced)
2 cups monterey jack cheese
1 lb. marinated fajita chicken (cooked)
corn tortillas
 

Instructions
Heat oven to 375'. Heat a medium skillet to med high and saute onions in oil until soft.
Spray a 9x13 baking dish. In a large bowl mix heavy cream and green chile.
To roll enchiladas, put onions, cheese, chicken and a bit of sauce into tortilla and roll. Repeat until dish is full. Cover enchiladas with remaining sauce, then cheese. Cover with foil and bake for 20 minutes. Remove foil and bake for 5-7 more minutes.
