Drain tuna well and empty into bowl. Prepare onion, celery, and pepper and add to tuna, mixing gently. Sprinkle with spices and gently mix again.
Place a slice of cheese atop a slice of bread, followed by- 1/2 of the tuna mix, tomato, another slice of cheese, and another piece of bread.
Place on baking sheet under the broiler, keeping an extremely careful eye on it, and carefully flipping sandwich once. If you prefer your cheese really gooey, then butter the bread and pan-fry like a grilled-cheese instead (CAUTION - this method may cause tomato to get EXTREMELY hot)
