     Green Chile Potato and Sausage Casserole

Ingredients
1 package sausage, sliced
1 poblano pepper, diced
2 cups Cookwell & Co. Green Chile Stew mix
1 8 oz. box, au gratin potatoes
1 cup water
1 cup milk
2 tbsp. butter
2 cups shredded Colby Jack cheese
 

Instructions
Preheat oven to 450'. Spray a 9x13 baking dish w/ cooking spray.
Brown sausage and pepper over med-high heat.
Meanwhile, in a large pot; combine potatoes and sauce mix packet, green chile, water, milk and butter. Stir and bring to a simmer. Add sausage and peppers. Pour into prepared dish and top with cheese.
Cover with foil. Bake for 25 minutes, remove foil and bake for 5-10 more minutes or until cheese is bubbly.
