Combine first 6 ingredients and blend until smooth. Add melted butter, vanilla and nutmeg and blend thoroughly. Let stand at room temperature for 30 minutes.
Preheat oven to 400. Place butter in ovenproof metal pan or 12 inch springform pan and heat in oven about 2 minutes. Remove from oven and brush butter over the inside of pan. Combine sugar, cinnamon, and nutmeg and sprinkle half of mixture in pan. Layer apple slices evenly over sugar. Sprinkle remaining sugar mixture over the apples. Place pan in oven until mixture bubbles (about 10 minutes). Gently pour batter over apples. Bake 15 minutes. Reduce heat to 325 and bake an additional 10 minutes. Loosen pancake from pan and slide onto platter to serve.
NOTE - I made this but I halved the batter ingredients when I was cooking for two. The original recipe called for only one apple but I would definitely use two apples if you are using the full batter recipe. I just used one apple for the two of us.
I did dust with a little powdered sugar and cinnamon. When we lived in Chicago we went to Walker Brothers for their Apple Pancake. It is the best but this is a close second.
