Cut the mozzarella into thick strips of cube shape. The dough should be able to fold around the cheese and come out about the size of a restaurant mozzarella stick. Put oil in a pan (preferably cast iron) about 1.5 inches deep & heat to medium high...it has reached temp. when water droplets make it sizzle.

Mix the egg up in a small bowl. Lay each piece of filo dough out in a diamond shape. Lay a strip of mozzarella bottom of center in the dough & fold the bottom corner up over the cheese. Dab egg @ every corner of the dough that is facing you...you are creating a seal around the cheese

Fold the side corners of dough around each end of the cheese & roll the entire creation up to the top corner. It should look like a nicely wrapped, burrito style blanket when done.

Place the rolled cheese into the preheated oil & cook until the wrapper is a golden color or to your liking. The oil should cover the mozzarella sticks when they are placed in the pan.
