1/2 garlic clove minced and mashed to a paste mixed with 1/2 tsp salt
1/3 Cup olive oil
1 Tbspn fresh basil, minced
Instructions
In a saucepan, simmer the sun-dried tomatoes in 2 inches of water for 3 minutes or until tender. Take them out and mince them.
In a bowl, whisk together the tomatoes, vinegars, and garlic paste. Pour the olive oil in a stream while whisking. Keep whisking until the vinaigrette is emulsified. Stir in the basil.
