     (OZ) EGGS BENEDICT

Ingredients
1 split Thomas' ENGLISH MUFFIN
2 large EGGS
several slices best DELI HAM (or 2 slices Canadian Bacon)
1 pkg. HOLLANDAISE SAUCE mix
1/2 stick real BUTTER
1-2 Tbl. VINEGAR (any kind)
PAPRIKA
 

Instructions
Add vinegar to a pot filled with 3 inches of water. Bring to a boil, then reduce to a simmer. Crack eggs into shallow, heat-resistant cups (one egg per cup). Barely lower cups into water and slowly tip the cup and pour them out. If eggs sink, wait until they set and gently pry them up with a slotted spoon. When eggs are set, remove pot from heat and let sit 10-12 minutes.
Meanwhile, prepare Hollandaise per pkg. directions [Melt butter in saucepan on medium-low heat. Whisk in 1 cup water and sauce mix. Stirring often, raise heat to medium until it boils. Reduce heat and simmer, stirring, for 1 minute, or until thickened].
Toast English muffins under broiler until golden brown, keeping a close eye on it so as not to burn. (You cannot achieve the same result with a toaster)
Plate muffin halves and pour a little sauce in them. Add ham to muffins. Carefully remove eggs with a slotted spoon and add to ham. Top each with half of remaining sauce and sprinkle with paprika.
