This recipe serves 4 and is baked and served in oblong shaped pyrex
individual serving dishes.

|
Mix the crushed crackers, grated cheese and bread crumbs together, add
onion flakes, garlic salt & pepper to taste. Melt the butter in a
microwave oven and add the juice of the 2 lemons (or 4 tablespoons of
lemon juice) to the melted butter.

Dredge the fish in flour and place 1/4 of the fish in each greased (I
spray with olive oil) dish and cover with bread crumb mix on top and all
sides of fish. Pour equal amounts of the butter melt evenly over each
serving. Place pieces of the sun dried tomato over each serving and
garnish with the parsley or dehydrated parsley flakes.

Bake in a pre-heated 450 degree oven for approximately 10 minutes.
