     Udon Noodle & Chicken Stir Fry

Ingredients
2 packages udon noodles (200 grams each)
1 tablespoon canola oil, divided
2 small chicken breasts, sliced thin
1/2 small green cabbage, shredded
1 red peppers, seeds removed and thinly sliced
1 cup broccoli cut into small pieces
3 tablespoons hoisin sauce
2 tablespoons soy sauce
 

Instructions
1. Cook the udon noodles in boiling water for 2 minutes then drain well. Set aside.
Heat a wok on high and add 1/2 tablespoon of oil when hot. Add chicken to wok, stirring occassionally, until cooked through . Remove chicken from the wok and set aside..
Add remaining oil and stir-fry cabbage, peppers and broccoli for 2 to 3 minutes.
Add hoisin and soy sauces and return chicken to the wok. Mix well then add noodles and stir-fry, tossing quickly, to heat through. Serve!
