     Mexican Frittata

Ingredients
8 eggs beaten
2 Tbsp flour
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp cumin
1 and 1/3 cups evaporated skim milk (1 can)
10 oz can diced tomatoes with green chiles
2 cups of shredded cheeses (I used Mexican blend)
 

Instructions
Preheat oven to 350 degrees. Combine all ingredients and put into a lightly greased 9x13 baking pan. Bake 45 min to 60 min until firm.
Serving Suggestions
Serve with Mexican Village Salsa or any other salsa that you like.
