1 cup all purpose flour
1 cup yellow corn meal
1/4 cup sugar
3 teaspoons baking powder
1/2 tsp salt
2 eggs
1 cup milk
1/4 cup butter, plus a bit more for coating pan

Combine flour, corn meal, sugar, baking powder and salt. Heat oven to 425F. Place cold butter in 10 inch skillet and place in the oven to melt as it preheats. Watch carefully so it doesn't burn. When melted, tilt pan to coat with butter. Pour butter into dry ingredients. Toss dry ingredients and butter until butter is evenly distributed.
Combine milk and eggs. Add to dough and stir just until combined. Avoid over-mixing as it will make the bread tough rather than tender.
Bake 20-25 minutes. Check after 15 minutes. Cornbread is done when pasta inserted comes out clean. Edges are brown and have pulled away from the sides. Cool on cooling rack.
