heat 2 T oil in a skillet over high heat. add the chicken and stir-fry until cooked through, about 3 min. add the carrot, celery, bell pepper, peas and red onion and stir-fry 3 min. add the ginger, garlic, sprouts, and shitakes. add 1/4 c of the sauce and cook until thick, 30 seconds,transfer to a bowl; top w/ the scallions and peanuts.
