     Asian chicken lettuce wraps

Ingredients
1/2 c soy sauce
2T rice vinegar
1 T minced garlic
1T peeled giner minced
1 T asian chili sauce
1T plum sauce
1T hoisin sauce
1T sweet rice wine
1 t fresh cilantro, chopped
 
1t sesame seeds, toated - black sesame seeds
1/4 t sesame oil - iceberg lettuce
6T canola oil -1 t minced ginger
1Lb skinless, boneless chick thighs, dicec
1/3 c diced carrot - 1t minced garlic
1/3 c diced celery- 1/3 c bean sprouts, halved
1/3 diced red bell pepper - 2T diced scallions
1/3 sugar snap peas, diced - 1T crushed peanuts
1/3 diced red onion

Instructions
sauce; combine all the ingredients in a bowl and set aside. stire again before using- all ingredients down to canola oil.
heat 2 T oil in a skillet over high heat. add the chicken and stir-fry until cooked through, about 3 min. add the carrot, celery, bell pepper, peas and red onion and stir-fry 3 min. add the ginger, garlic, sprouts, and shitakes. add 1/4 c of the sauce and cook until thick, 30 seconds,transfer to a bowl; top w/ the scallions and peanuts.
